  1. PESCAÍTO FRITO (Fried fish)
Eating “pescaíto frito” or “fritura andaluza” is a really ancient tradition. Bars and restaurants clutter their terraces with this dish made with different fish: anchovy, mill, “pijotas”, little sardine, red mullet, “chanquete”, whiting, mackerel, squid, “choco”, “puntillas” or shrimps. The selection varies according the chef’s decision.
It is served warm, newly fried. You can eat it with a little bit of fresh lemon juice, but it is said that it hides the flavour that the sea’s quality offers. You can have it as a snack or as a main dish.
 
  1. RED TUNA AND AVOCADO TARTAR
Which is a better way for getting to know the richness of Cádiz’s waters than tasting one of the most distinguish fish in its gastronomy?
The wild red tuna is an autochthonous fish which is found in Cádiz’s coastline, more specifically in Barbate’s almadrabas. In addition to being one of the best tuna in the world, local people and visitors consume it because of its texture, its flavour and its protein content. It is such a gastronomic jewel!
Red tuna tartar is eaten raw and cut in very small pieces. It is served cold and with some added elements: a dill touch, capers, sacallions, soja sauce drops, vinegar from Jerez, salt, pepper and a good oil, with designation of origin from the province.

  1. CAZÓN EN ADOBO (MARINATED DOGFISH)
Marinated dogfish is one of the most typical dishes in Cádiz, as well as a classic in Andalusian bars and restaurants. It can also be called “bienmesabe” or “El adobo”.
In the XIX century it could be tasted in every Cádiz frying, so you can imagine the great tradition this exquisite fish, originating from the shark, has. The most popular ways of preparing it are marinade, non-marinade or cooked in yellow.
The marination is made with garlic, paprika,oregan, comin, laurel, vinegar and olive oil. It is lately poured in flour and a hot and abundant amount of olive oil, for it to be crunchy.
